The Realistic Lunches Getting Me Through Motherhood Right Now

One thing I’ve realized in this season of motherhood is that if I don’t make nourishing meals easier for myself… it probably isn’t happening.
I work from home, which people sometimes assume means I have unlimited time to cook beautiful fresh lunches every day. In reality, my days still feel very full between work, mom life, snack requests, cleaning up the same mess 14 times, and trying to exist as an actual human too.
So instead of aiming for perfection, I focus on making things easy enough to follow through with.
That usually looks like prepping a few simple lunch components ahead of time so future me has something nourishing ready to grab during the week.
Not fancy.
Not aesthetic.
Just realistic.
Here are a few of my favorite go-to lunches lately:
Taco Beef + Cottage Cheese + Sweet Potato Bowls
Yes… the viral bowl 😂
But honestly? It’s popular for a reason.
I usually prep taco beef and roasted sweet potatoes ahead of time, then throw everything into a bowl with cottage cheese and avocado.
It’s super satisfying, high protein, and keeps me full way longer than the random “grab whatever’s left off my toddler’s plate” lunches I used to survive on.
What I love most is that it takes almost no mental energy once the components are prepped.
Pesto Chicken Pasta Bowls
This is one of those meals that feels a little more fun while still being incredibly simple.
I’ll do:
chicken
protein pasta
pesto
green beans
Or I’ll throw the pesto chicken into a wrap with greens, tomatoes, and mozzarella if I want something handheld while multitasking around the house.
It feels balanced without requiring a complicated recipe.
Salsa Chicken Bowls
This is probably one of my easiest “throw it in the crockpot and move on with my life” meals.
Salsa chicken with:
rice
beans
corn
avocado
Simple. Filling. Family friendly.
And usually there are leftovers which automatically makes it a win in my book.

The Snacks That Save Me
Honestly, snacks matter just as much for me right now.
If I wait until I’m absolutely starving, I’m way more likely to either forget to eat entirely or end up scavenging for random convenience foods that don’t actually leave me feeling good.
A few staples lately:
greek yogurt bowls
DIY trail mix
energy bites
cottage cheese ranch dip + veggies
“kidcuterie” boards 🤗
And yes… sometimes I make the snack plate for myself too.
Motherhood has actually taught me that nourishing myself consistently matters more than trying to eat “perfectly.”
The Biggest Thing That’s Helped Me
I stopped trying to reinvent the wheel every week. I think so many moms assume healthy eating has to mean:
brand new recipes
tons of prep
complicated meal plans
or spending hours in the kitchen
But honestly, having a handful of balanced meals you genuinely enjoy on repeat can make such a huge difference.
Especially in busy seasons.

Not to give moms more pressure.
Not to make meals look Pinterest-perfect.

Some weeks I want lighter, fresher meals.
Some weeks I need grounding, comforting, higher protein meals that actually keep me going.
