Stovetop Frittata



This fritatta reminds me of Spring and is a fan favorite in my Springtime Favorites E-Book. It is the perfect weekend brunch or to add to your freezer prep for postpartum!


I hope you enjoy this as much as I do!


Ingredients

  • 6 eggs

  • 2 cups of spinach

  • 1/2 red bell pepper

  • 4-6 oz leftover thanksgiving turkey

  • 2 tsp olive oil

  • 1/2 avocado

  • Optional: fresh herbs


Preparation

  1. Turn your broiler on first as you will use this at the end to finish cooking the frittata.

  2. Whisk 6 eggs in a prep bowl and set to the side

  3. Add 2 tsp of olive oil to the pan and add in spinach, peppers, and turkey and begin to cook until everything is soft.

  4. Add in your whisked eggs and let cook for 7-8 minutes or until eggs are cooked through with just the top being runny.

  5. Once eggs are cooked, put your pan into the oven to finish under the broiler for approximately 2 minutes.

  6. Top with sliced avocado and fresh herbs if you have them on hand.

  7. Enjoy!


Tips

Can be refrigerated for up to 3-4 days or frozen for 30 days.
