Blueberry & Banana Overnight Oats



Ingredients

  • ½ Cups Old fashioned rolled oats,

gluten-free

  • 1 TBSP 100% natural milled golden flaxseed

  • ½ Cup coconut milk beverage, unsweetened

  • ¼ tsp vanilla extract

  • ½ small banana

  • ½ Cup blueberries

  • 2 tsp VT Maple Syrup


Preparation

  1. In a 16-ounce mason jar combine the rolled oats and ground flax seeds.

  2. Pour in the coconut milk and then place the bananas and blueberries on top of the oats.

  3. Place the lid on and store in the refrigerator overnight. Stir the oats and add in the pure maple syrup and a little extra coconut milk to loosen up the oats.

  4. Enjoy cold!

Tips

To make multiple of this recipe increase recipe amount. These can be easily made the night ahead of time and put in the fridge for a quick grab and go breakfast or post-workout snack. You could also add a scoop of protein powder if you are looking to gain lean muscle mass.
