2 large sweet potatoes
2 bell peppers
½ white onion
1 package chicken sausages
1-2 handfuls arugula (or other greens)
Drizzle of tahini
To make the sheet pan start by preheating the oven to 425
Slice up all veggies and chicken sausage and lay them out in 1 layer on your sheet pan (you may actually need 2).
Cook for 25 minutes, rotating everything about halfway through.
Divide veggies & proteins into 3-4 equal meal prep containers.
To prepare this bowl take 1-2 handfuls of any greens you have on hand. This week I had Arugula which is one of my faves! Then top with the sheet pan ingredients, 1/4 avocado, and a drizzle of tahini!
These are perfect for meal prep! Divide into your containers and then add the avocado to the containers the day of so they don't turn brown. To store your avocado squeeze with a little lemon juice and save in a stasher bag or specially made avocado holder.
